Tasting Notes

Primitivo wine originated from the Croation grape Crljenak Kaštelanski cultivated in the Dalmatian region since the 15th century. It was introduced to Italy’s Puglia region in the 18th century where it thrived in the warmer climate and limestone rich soils. It is the most widely cultivated grape in the Puglia region. The name Primitivo derives from the Italian word primo meaning first. This reflects the grape’s early ripening characteristics. The regions hot summers, moderate rain fall and coastal breezes from the Adriatic and Ionian Seas contribute to the grape’s distinctive character. Additionally, modern DNA analysis has confirmed the Primitivo grape and California’s Zinfandel are genetically identical both originating from the Croation grape.

🎯 Overall Character - Primitivo is best described as rich, dark‑fruited, spicy, and warm. A full bodied Southern Italian red with a deep garnet colour, plush tannins and bold personality.

🍒 On the Nose (Aromatics) - Primitivo is intensely aromatic, with a mix of ripe fruit and warm spice. Notes of strawberry, raspberry, blackberry, cinnamon, pipe tobacco, licorice and black pepper are present. Vanilla, cocoa and smoke also present if oak aged. The fruit often smells jammy, macerated, or crushed, reflecting Puglia’s heat and the grape’s early‑ripening nature.

🍷 On the Palate - Primitivo is typically full bodied, high in alcohol (14–16% ABV), lower in acidity, with soft, supple tannins. Flavors include blackberry, plum, raspberry, brown sugar, baking spice and vanilla, cocoa, and smoke in premium bottlings. The finish is often long, warm, and fruit‑rich, with a velvety texture.

🕰️ Aging Profile - Primitivo wine can be aged for 5-10 years, with quality examples potentially lasting 10-15+ years. The aging process enhances its flavors, making it more complex and balanced over time. It's best to enjoy Primitivo at 5-6 years old for optimal taste.

Food Pairing

Primitivo’s personality — rich dark fruit, soft tannins, medium acidity, spice, and a rustic, earthy edge makes it a natural partner for tomato‑based dishes, grilled meats, Mediterranean vegetables, and hearty Southern Italian fare.

🍝 1. Tomato‑Based Italian Classics - Primitivo’s acidity and rustic spice make it ideal for tomato‑driven dishes. Pairs well with spaghetti Bolognese, pasta puttanesca, lasagna, and strozzapreti with roasted tomato. Tomato acidity meets Primitivo’s medium acidity and the wine’s dark fruit and spice complement herbs, garlic, and umami.

🍕 2. Pizza (Rustic and Savory styles) - Primitivo is a classic Puglian pizza wine. Ideal pairings include pizza rustica with tomatoes, onions, capers, anchovies, salami or sausage pizza, and eggplant topped pizza. The wine’s fruit richness balances salt and umami, while its rustic notes echo charred crust and roasted toppings.

🥩 3. Grilled & Roasted Meats - Primitivo’s bold fruit and spice stand up to smoky, charred flavors. Pairs well with lamb chops, salsiccia (Italian sausage), spare ribs and lamb. Protein softens tannins, while smoke and spice mirror the wine’s natural character.

🍆 4. Mediterranean & Vegetable‑Driven Dishes - Primitivo’s earthy, peppery notes love roasted vegetables. Pairs will with grilled vegetable pasta, eggplant Parmigiano (Parmesan), Aubergine casserole, and Ratatouille. Charred vegetables and herbs match Primitivo’s rustic, spicy profile.
