Riesling
Tasting Notes
Riesling is one of the most expressive white grapes in the world with it’s origins in the Rhine region of Germany dating back to the to the 15th century. Primarily cultivated in the Rhine area of Germany for centuries, it is now widely grown globally. It is a cold and hardy grape that prefers cool to moderate climates and capable of producing wines at all sweetness levels. Flavours will vary depending on where the grape is grown and the ripeness of the grape at time of harvest.
🎯 Overall Character - Riesling is best described as a high acidic wine with intense floral aromas and flavourful fruit notes. It is known for its refreshing taste and is produced in all sweetness levels (dry, off-dry and sweet).
🌼 On the Nose (Aromatics) - Riesling is intensely aromatic, but in a clean, precise way. Primary Aromas include lime, lemon zest and mandarin. These citrus aromas are complemented with orchard fruit such as green apple, pear and quince. Grapes grown in warmer climates or grapes harvested extra ripe will have aromas of peach and apricot. Riesling also has intense floral aromas of jasmine, white blossom and honeysuckle. This is a Riesling trademark. Riesling wine will also have secondary aromas of honey, beeswax, white tea and lemongrass.
🍋 On the Palate - Riesling is a light to medium body wine depending on sweetness level and region the grape is grown. It is high in acidity with a crisp texture in dry style wines and a creamy texture in off dry of sweet wines. Fruit expressions include:
Dry wine: lime, green apple, grapefruit and crushed stone.
Off‑dry wine: peach, apricot and honeyed citrus.
Sweet wine (Spätlese/Auslese): ripe stone fruit, pineapple, mango and honey.
Riesling will also provide subtle minerality notes of saline, slate, flint and smoke.

Mosel, Germany – dry and sweet wines with high acidity, low alcohol, slate minerality, lime, green apple and with peach aromas and flavours
Rheingau, Germany – Dry style wines more powerful than Mosel Riesling wines. Riper fruit with flavours of peach and herbal notes.
Alsace, France – Dry wine style that is full body with apple, peach and spice aromas and flavours
Austria – Dry wine style with citrus and stone fruit aromas and flavours.
Clare/Eden Valley, Australia – Dry wine style with high acidity and lemon/lime aromas and flavours.
Niagara region, Canada – Dry and sweet style wines with high acidity and aromas and flavours of lemon, lime, green apple, peach and minerality.
Washington State, USA – Dry and sweet style wines with high acidity and aromas and flavours of lemon, lime, peach and floral
🕰️ Aging Profile - Riesling wines are best enjoyed within 1-3 years to take advantage of their fresh fruit flavours however this grape has great aging potential depending on the wine style and sweetness level.
Dry Riesling - Can typically age from 5-10 years.
Off-Dry Riesling - Can age from 5 to 15 years.
Sweet Riesling - can age 20+ years.

Riesling is considered one of the most versatile wines amongst wine lovers. It’s high acidity, fruit forward flavours, aromatic intensity, and wide range of sweetness levels allows it to pair well with a wide range of dishes. From seafood to spicy Asian dishes, Riesling is a great wine companion to various dishes.
Dry Riesling - pairs well with seafood, citrus‑driven dishes and fried foods.
Off‑dry Riesling - pairs well with spicy dishes, pork, sausages and sweet‑savory dishes.
Sweet Riesling pairs well with strong cheeses, blue cheese and a variety of desserts.
🌶️ 1. Spicy Asian Cuisine - Off Dry Riesling pairs well with spicy, aromatic dishes such as Thai green curry, Szechuan shrimp, Tandoori chicken, Spicy chicken wings and Pad Thai. The Sweetness of the wine cools heat and the wine acidity keeps the palate fresh.
🐖 2. Pork & Rich Meats - Riesling’s acidity cuts through fat beautifully. Ideal pairings include Pork belly, Pork schnitzel and Hawaiian pizza (sweet + salty).
