Tasting Notes

The origin of Vermentino wine is not 100% certain. Previously thought to have originated in Spain and introduced to Italy in the 14th century, DNA tests recently confirmed Vermentino to be identical to the Pigato grape of Liguria and the Favorita grape of Piedmont confirming it’s Italian Roots. Vermentino is one of the Mediterranean’s most vibrant, sun‑soaked white grapes.

🎯 Overall Character - Vermentino wine is characterized by its light-bodied profile, high acidity, and refreshing taste. It typically features aromas of citrus, green apple, and pear, with herbal notes like sage and rosemary. The wine is known for its mineral quality, often described as salty or chalky, contributing to its complex flavor profile.

🌼 On the Nose (Aromatics) - Vermentino is aromatic but not overpowering. It is a fresh tasting wine with fruit, herbal notes and characteristics of coastal wines that are typically high in acidity, fruity, saline and aromatic. Primary Aromas offered are lemon zest, lime, grapefruit, green apple, pear (peach aromatics in warmer climates). It has pronounced aromas of white flowers, acacia and chamomile with a herbal notes of sage, thyme and rosemary. It also has a saline minerality and notes of crushed stone and sea spray. Secondary aromas exhibited are Almond skin, Light honey or fennel seed. Subtle notes of brioche and cream if lees aged.

🍏 On the Palate - Vermentino is a light to medium body wine with medium refreshing acidity. Alcohol levels are considered moderate at 12-13% ABV. The texture of the wine is crisp and clean and sometimes lightly waxy or oily. Fruit expressions include citrus fruits, green apple, pear and peach/melon in riper examples. The wine has a minerality backbone offering saline, stone and sometimes slightly smoked flavours. Vermentino often shows a slightly bitter almond or citrus pith note on the finish.

🌍 Regional Style Differences:

  • Sardinia, Italy - Vermentino di Gallura – Benchmark characteristics are saline backbone, mineral, citrus, and herb notes. Wine is structured and age worthy.

  • Liguria, Italy - (Pigato) – More floral and aromatic. Peach, herbs and sea spray notes.

  • Tuscany,  Italy – Vermentino Toscano – Riper Fruit, rounder texture, peach melon and citrus oil aromas and flavours.

  • Corsica,  France– Vermentino – Fresh, herbal, mineral, and citrus aromas and flavours with wild scrub notes. Elegant and coastal.

  • Languedoc,  France – Light, crisp, citrusy and is often blended. Refreshing and easy to drink.

🕰️ Aging Profile - Vermentino can be aged 3-5 years however it is intended to be enjoyed as a young wine. Fruity and floral characteristics of the wine will diminish over time.

Food Pairing

Vermentino is one of the Mediterranean’s most expressive whites. It is fruity, herbal, citrus driven and mineral. It is exceptional with seafood, especially grilled or simply prepared as often enjoyed in coastal Mediterranean regions.

🐟 1. Seafood (The Signature Pairing) - Ideal pairings are Grilled Sea Bass or Sea Bream with herbs and lemon, Shrimp, Prawns, Mussels or Clams cooked with garlic and parsley, Oysters, or Octopus. Vermentino’s acidity, citrus, and saline minerality act like a squeeze of lemon on seafood.

🍤 2. Fried Seafood & Fritto Misto - Best matches include Calamari and Fried Misto (Mixed fried seafood). Vermentino’s crispness cuts through fried textures beautifully.

🍝 3. Pasta & Mediterranean Classics - Ideal pairings include Spaghetti alle vongole (clams), Linguine with fish, Saffron Risotto and Vegetable Paella (for lighter styles). Vermentino shines with light, herb‑driven Italian dishes.

🥗 4. Salads & Antipasti - Best matches include Seafood salad with citrus vinaigrette, Caprese salad, and Vitello Tonnato (veal with tuna‑caper sauce). Fresh Vermentino pairs beautifully with bright, summery plates.

🌿 5. Herb‑Driven & Light Poultry Dishes - Vermentino’s herbal notes (sage, rosemary, thyme) make it perfect for Herb‑crusted chicken or fish, Lemon chicken and Grilled vegetable salads

🍣 6. Asian Cuisine (Surprisingly Good) - Vermentino’s citrus + herb profile works with aromatic, lightly spiced dishes. Recommended pairings include Sashimi or sushi, Tempura vegetables, Thai green curry (mild heat) and Vietnamese spring rolls with herbs and shrimp.

🧀 7. Cheese Pairings - Medium‑bodied Vermentino (e.g., Gallura DOCG) pairs well with soft cheeses such as Brie and Burrata.

🍯 8. Mature, Complex Vermentino - Barrique‑aged or older Vermentino shows honey, dried apricot, vanilla, roasted almond notes, Best matches include Nut based dishes, Creamy sauces and Richer poultry or Veal.
